What is Andrew Stuttaford playing it?
A normally intelligent and wise fellow, he has come out with a whopper:
Proper smoked salmon is Scots, eaten with brown bread and butter and flavored with a little lemon juice. Come to think of it, this delicacy (along, perhaps with potted shrimps) is one of the few that does need brown bread.
Sheer nonsense.
As any fule kno, there is only one way to eat smoked salmon: inside a rye bread sandwich, with some pickled cucumber on the side.

Smoked salmon? And you call yourself a left winger? Where's your dignity, man? You might at least eat it with chip butties and pickled onion crisps. While wearing grey wool fingerless mittens.

Sorry, Stephen. I'm with Stuttaford on this one. The other way I love smoked salmon is chopped fine in scrambled eggs on toast for breakfast in bed on a Sunday morning (with lots of Buck's Fizz and someone to share it with).
Pickled cucumber tends to overpower smoked salmon,the only way to overcome this is by doubling the quantity of smoked salmon.I read that oily fish is very goog for arthritis so I tried wrapping some roung my bad finger,all in all probably better eating the stuff.
Smoked salmon is best served with coarse norwegian bread, topped with butter , and mashed eggs.
Unfortunately, what we export from Norway is too often the "liquid fish" version of smoked salmon, which should be "dry".
Mashed eggs should be an easy recipe, but I repeat it:
(2 servings)
2 eggs
2 eggshells of water
2 ts of chives or finely chopped onions or finely chopped loaches.
Put into skillet (teflon is best). Add butter or oil(1 ts).
While whisping, cook at low heat until a creamy consistence.
Serve, and enjoy.
So, Kjell, I'm guessing you're Swedish, yeah?

Smoked salmon is from Scotland? Whoa, so much for my stash of BC Smoked Sockeye, from the shores of Vancouver Island. It's store-bought stuff, but almost as good as my home-smoked product. Oh, smoked salmon is not pink and not moist.

Bread with smoked salmon? Eugh. It must be fanned out on a plate with a great dollop of creme fraiche in the middle, onto which capers and fresh dill have been sprinkled.
For wild Alaska smoked salmon the only way to eat it is thinly sliced with cream cheese on a bagel. Or hot out of the smoker. Oh, and smoked salmon is moist.. unless you over cook it.
